Monster Cookie Bars

I love the taste of monster cookies, but don’t like to spend all day in the kitchen.  This is a quick and easy way to have the same great taste.  It also makes a huge pan, so there is enough to share….if you want to!

Oven: 350   Bake Time:  15-20 Min  Yield: 13×17 pan

Ingredients:

  • ½ c butter
  • 1 c white sugar
  • 1 c brown sugar
  • 1 ½ c peanut butter
  • 1 t baking soda
  • 3 eggs
  • 1 t vanilla
  • 4 ½ c oatmeal
  • 1 ½ c chocolate chips
  • 1 ½ c M&Ms

Directions:

  • Preheat oven to 350.
  • Cream butter and sugars together until smooth.
  • Add soda, vanilla, eggs and peanut butter and mix until creamy.
  • Add oatmeal, blend together.
  • Add chocolate chips and M&Ms.
  • Spread in 13×17 jelly roll pan.
  • Bake for 15-20 minutes until slightly brown on the edges.

 

Black and White

I love chocolate.  My youngest loves chocolate.  So what can be better than chocolate?  How about double chocolate!  Please proceed with caution….if you eat too much of either one or even just do the “tasting”, you are sure to need a large glass of water or milk to help your stomach recover.    I decided that the muffins would be a good, health snack for the boys since it has bananas and applesauce in them.  However it only called for ½ c of white chocolate chips.  Instead of putting the rest of the chips back in the freezer, I decided to use the rest to make cookies. 

Chocolate White Chocolate Banana Muffins

Oven: 325  Cook Time: 30 minutes   Yield 1 doz

Ingredients:

  • 2 T butter, softened
  • 1/3 c sugar
  • 2 large egg whites
  • ½ t vanilla
  • ¼ c apple sauce
  • 3 ½ ripe medium bananas, mashed
  • 1 ¼ c flour
  • 3/4 t baking soda
  • ¼ c unsweetened cocoa powder
  • ½ c white chocolate chips (can also use chocolate chips)

Directions:

  • Preheat oven to 325.
  • Line muffin tins with liners or spray with cooking spray
  • In large mixing bowl, cream butter and sugar
  • Add egg whites, bananas, apple sauce, and vanilla and beat until thick.
  • In medium bowl, combine flour, cocoa powder and baking soda.
  • Add flour mixture to banana mixture and blend at low speed until combined. DO NOT over mix.
  • Fold in chocolate chips.
  • Pour ¼ c batter (or so) into each muffin tin.
  • Bake for 30 minutes or until toothpick inserted in the center comes out clean
  • OPTIONAL:  Top with glaze by combining 2 T powdered sugar with ½ t water.

White Chip Chocolate Cookies

Oven: 350   Bake Time: 10 minutes  Yield: 4 ½ doz

Ingredients:

  • 1 c butter, softened
  • 2 c sugar
  • 2 eggs
  • 2 t vanilla
  • 2 c flour
  • ¾ c unsweetened cocoa powder
  • 1 t baking soda
  • 1 ½-2 c White Chocolate Chips

Directions:

  • Preheat oven to 350.
  • Beat butter and sugar until creamy.
  • Add eggs and vanilla and beat until light and fluffy.
  • Stir together flour, cocoa and baking soda.
  • Gradually beat into butter mixture.
  • Stir in chips.
  • Drop by teaspoon onto cookie sheet.
  • Bake 10 minutes (do not over bake).

Having Fun with M&Ms

 With two growing boys, including one with an extreme sweet tooth, I almost always have some sort of treats that include chocolate for snack time.   

 No Bake Bars

Yield:  One 15” x 10” x 1” Pan

Ingredients:

  • 4 c Cheerios
  • 2 c Rice Krispies
  • 2 c dry roasted peanuts
  • 2 c M & M’s
  • 1 c light corn syrup
  • 1 c white sugar
  • 1½ c creamy peanut butter
  • 1 t vanilla

 Directions:

  • In large bowl, combine the first four ingredients and set aside.
  • In saucepan, bring corn syrup and white sugar to a boil, stirring frequently.
  • Remove from heat.
  • Stir in peanut butter and vanilla, pour over cereal mixture and toss to coat evenly. Spread into a greased 15” x 10” x 1” pan.
  • Cool and cut.

 

Tyler’s Chex Mix

Ingredients:

  • 9 c Chex cereal (Corn, Rice, Wheat or a combination of any or all)
  • 2 c gold fish-pretzels
  • 2 c gold fish-cheddar cheese
  • 1 package (8 oz) Gardetto’s Special Request Roasted Garlic Rye Chips
  • 1 Medium bag M&M (can be plain, peanut, almond, etc)
  • 6 T butter or margarine
  • 2 T Worcestershire sauce
  • 1 ½ t seasoned salt
  • ¾ t garlic powder
  • ½ t onion powder

 Directions:

Microwave:

  • In large microwavable bowl, mix cereals, gold fish and rye chips; set aside.
  • In small microwavable bowl, microwave butter uncovered on High about 40 seconds or until melted.
  • Stir in seasonings.
  • Pour over cereal mixture; stir until evenly coated.
  • Microwave uncovered on High 5 to 6 minutes, thoroughly stirring every 2 minutes.
  • Spread on paper towels to cool.
  • Add M&Ms.
  • Store in airtight container.

OR

 Oven:

  • Heat oven to 250°F.
  • In large ungreased roasting pan mix cereals, gold fish and rye chips; set aside.
  • Melt butter on stove or in microwave.
  • Stir in seasonings.
  • Gradually stir in cereal mixture until evenly coated.
  •  Bake 1 hour, stirring every 15 minutes.
  • Spread on paper towels to cool, about 15 minutes.
  • Add M&Ms
  • Store in airtight container.

 

Garbage Can Cookies

Oven: 350   Cook Time: 11-13 minutes   Yield: 7 dozen

Ingredients:

  • 1 c butter
  • ½ c sugar
  • 1 ½ c brown sugar
  • 2 eggs
  • 1 t vanilla
  • 2 T milk
  • ½ c peanut butter
  • 2 c flour
  • 2 c oatmeal
  • 6 oz chocolate chips
  • 6 oz peanut butter chips
  • 1 c M&Ms

Directions:

  • Cream butter and sugars.
  • Add eggs and mix well.
  • Combine vanilla, milk and peanut butter into mixture.
  • Add flour and oatmeal-mix until moistened.
  • Stir in chips and M&Ms.
  • Bake in 350 oven for 11-13 minutes.
  • Cool on pan for 1 minute.
  • Remove and cool completely on wire rack.

Cake mixes…but not just making plain ol’ cake

Using readymade ingredients can make life easier if you are limited on time.  Here are a few recipes that call for cake mixes as one of the main ingredients, but you don’t follow the directions on the box.

Red Velvet Bread

Oven: 350  Bake time: 45-50 min  Yield: 2 loaves

  • 1 box red velvet cake mix
  • 1 pkg. instant vanilla pudding (I used sugar free)
  • 1/3 c oil
  • 4 eggs
  • 1 c. sour cream (I used fat free yogurt)

Combine ingredients and beat for 2 minutes.  Place batter into 2 well greased loaf pans.  Bake at 350 for 45-50 minutes.  Let cool in pan 10 minutes then remove and cool completely.

*Note you can also use a lemon cake mix with lemon pudding.

 This next recipe has rave reviews from my 5 year old, who requests the cookies be made into ice cream sandwiches.  He even had to bring a batch to daycare for his birthday and has requested them numerous times since.

Choose a cake mix cookies

Oven: 375  Bake time: 8-10 min   Yield: 7 dozen

  • 1 package cake mix (your choice of flavor)
  • 2/3 c butter, melted
  • 2 eggs
  • 12 oz package chocolate chips (or white if you prefer)

In large bowl combine all but chocolate chips; mix well.  The dough will be stiff.  Stir in chocolate chips.  Place on cookie sheet and bake at 375 for 8 to 10 minutes or until golden brown.  Cool 2 minutes on cookie sheet then a wire rack. 

*Note I have used funfetti cake mix with chocolate chips.  The picture is a german chocolate cake mix with white chocolate chips.  I then placed mint chocolate chip ice cream in between 2 cookies for homemade ice cream sandwiches. 

 I like to make treats for my sons to share at daycare, however one of the children has an egg allergy.  I received these recipes from my cousin and now this is the only way that I make cake or cupcakes.  No more having to worry if I have eggs or oil on hand and they are lower in fat and calories!

Cake with Soda (Pop)

Spice Cake & Diet Coke cake

  • One package Spice Cake
  • One 12 oz can Diet Coke

Combine ingredients, pour into greased 13×9 pan (or make 24 cupcakes) bake according to instructions.

 Other combinations:

  • Lemon with 7 UP CAKE
  • Chocolate and Cherry Soft Drink Cake
  • Lemon with Diet Mountain Dew
  • Spice or Carrot with Fresca
  • Chocolate with Diet Dr. Pepper
  • Red Velvet Mix with Diet Coke
  • Strawberry with Diet Sprite

 Of course cake is not complete without frosting.  Thanks to a former co-worker, S.D-K whom introduced me to this awesome alternative to sugary-store bought frosting.

Cool Whip Frosting

  • 1 c milk
  • 1 pkg. instant pudding (flavor of your choice)
  • 1 t vanilla
  • 1 (8 oz) Cool Whip

Mix together milk, pudding, and vanilla.  Whisk in cool whip.  Frost cake or cup cakes.  Make sure to store in the fridge.

*Note: you can use vanilla, chocolate or any flavor of pudding you would like.  I use sugar free pudding, skim milk and lite cool whip.

Potato Chips!

 Last night as my family and I were sitting on the deck with some great neighbors, my youngest asked me to make pickle dip.  Since all of the boys in my life are spoiled (I mean loved!), I made some today.  For those of you unfamiliar with pickle dip, it is a highly addictive dip that you eat with potato chips (or other chips to your liking if you so choose).  The expectation from many friends and family members is to bring pickle dip when we are together. But then after all the dip is gone and you have left over, sometime stale, potato chips…make cookies!

 Pickle Dip

Ingredients:

  • 2-8oz packages cream cheese
  • 16 oz sour cream
  • 32 oz jar Gedney Jalapeno Babies, finely chopped (*note: Wal-Mart does not carry these)
  • ¼ to ½ c pickle juice
  • Garlic salt to taste

Directions:

  • Cream sour cream and cream cheese together.
  • Add pickles that have been finely chopped to creamed mixture.
  • Mix in 1/4 to 1/2 c of the pickle juice from the Gedney Jalapeno Babies (amount depends on how “soupy” you want your dip).
  • Add garlic salt to taste.
  • Sit down and enjoy with potato chips or chips of your choice.

Peanut Butter Chocolate Chipper Cookies

Oven: 375 Bake time: 12-14 minutes
Makes 7 1/2 dozen cookies

Ingredients:

  • 1 c peanut butter
  • 1 c butter, softened
  • 2 c brown sugar
  • 1 c white sugar
  • 4 eggs
  • 1/4 c honey
  • 1/4 c water
  • 2 t vanilla extract
  • 4 c flour
  • 2 t baking soda
  • 1 1/2 c crushed potato chips  
  • 2 c chocolate chips

Directions:

  • Preheat oven to 375 and line baking sheets with parchment paper.
  • In a large bowl, cream peanut butter, butter, brown sugar and white sugar until smooth.
  • Beat in eggs.
  • Stir in honey, water and vanilla.
  • Stir flour and baking soda into peanut butter mixture and mix until smooth.
  • Fold in crushed potato chips and chocolate chips.
  • Drop dough onto prepared baking sheets using a tablespoon.
  • Bake for 12-14 minutes or until edges are golden.
  • Allow cookies to cool 1 minute before moving to cooling rack.
